Caprese Bites

This week has been all kinds of crazy. Matt and I took the 4th to celebrate his birthday (the big one!), and then drove up to Sioux City for a night of fireworks. The past two days since then have been nonstop concerts at the 80/35 music festival here in town! For as small of a Midwestern city as it is, Des Moines sure has a hoppin' music scene. We've seen Wu Tang Klan, Yeasayer, Deerhunter, Wavves, and ST. VINCENT WITH DAVID BYRNE (I'm still not over how incredible the pair is....) All this to say the blog has fallen a bit on the backburner the past few days. But today I'm back at it!
I am in love with these caprese bites right now! They make a delicious vegetarian meal that feels lighter than an actual pizza. I'll take whole tomatoes over storebought pizza sauce any day!

Mini Caprese Bites

Ingredients needed:

1 pizza dough (homemade or storebought)
12 cherry or grape tomatoes
about 1 cup shredded mozzarella cheese
basil

/1/ Divide the pizza dough into 12 pieces.

/2/ Roll each piece out into a flat circle, sprinkle a spoonful a spoonful of mozzarella on top, and place a cherry tomato in the center.

/3/ Fold the circle up so that it entirely covers the tomato, and place each bite seam-down on a greased pan.

/4/ Bake at 425 for 15-20 minutes.
