Newsflash: I really love sweet potatoes. Sweet potato fries, sweet potato bakes, baked sweet potatoes… anything! I’ll eat it. I picked up a couple of these delicious vegetables at the Farmer’s Market this past week, and thought I’d share what I think is one of the easiest and most delicious ways to prepare them. When I was living in Romania this past year, my host mom showed me her “secret ingredient” for perfect sweet potatoes, and I fell in love! The secret? Vanilla flavoring. It gives the potatoes the perfect amount of sweetness without overpowering their natural scrumptious flavor. And on that note...

Perfect Mashed Sweet Potatoes
Ingredients needed:
2 medium sweet potatoes
3 tbsp. milk
2 tsp. brown sugar
A dash of vanilla flavoring
/1/ Peel 2 those gorgeous orange beauties.
/2/ Bring a pot water to boil (add a dash of salt to
make it boil quicker!) and drop in the sweet potatoes. Let them boil for about
20-25 minutes, or until softened.
/3/ Mash ‘em! This is the fun part. If you like your
mashed potatoes to be really creamy, a blender would probably work for this.
Personally, I like having some chunks so I drop them in a bowl and start
mashing with a cup.
/4/ Add milk, brown sugar, and vanilla the potatoes
and enjoy!
